The harvest by hand in the month of September. Each variety is vinified separately using concrete and wooden tanks. Slow fermentations and delicate extractions. After malolactic fermentation, the different varieties are assembled and undergo an aging process that lasts about 14 months in French oak barrels, 30% of which are new.
