The grapes for our sparkling wines are sourced from our oldest and best Riesling vineyard sites. Gentle whole-cluster pressing and extended aging is carried out in 500 l tonneaux crafted with oak sourced directly from the Palatinate forest. The secondary fermentation follows the traditional steps for vintage méthode champenoise; 41 months aging on the lees in bottle, lending to a soft texture with a fine mousse of bubbles on the palate. This extended lees aging also enhances the striking mineral nuances while highlighting all of the classic Riesling aromas one can hope to expect. Zéro dosage and zero sulfur added after the wines are disgorged.
