This regenerative organic Sauvignon Blanc was hand harvested on September 4th with an elegant crisp acidity and only 12.5% potential ABV. It comes from sandstone top soils with volcanic bedrock. This terroir lends the wine a unique freshness that compliments the 80 year old vines. Tasting notes: intense cassis and exotic fruit aromas reminiscent of Sauvignon Blanc, bone dry taste with well balanced acidity and complex fruity taste with spicy notes. well structured with a long finish; Winemaking: 12 hours skin contact in press, spontaneous fermentation in 100% 600l Stockinger barrels and 6 months on the fine lees, minimal sulfuring and no filtration or fining before bottling;
