“Vom grauen Schiefer“ translates to “on the grey slate”. As the name suggests, the grapes for this wine grow on the steep slopes of our vineyard sites in Pünderich, where the grey slate is the predominant soil structure. The soil gives the Riesling its distinctive minerality and flavors reminiscent of white and yellow peaches.
The grapes are handpicked at the end of October at about 85-90° Oechsle. They are gently pressed and will ferment spontaneously in old “Fuder” barrels. In the cool cellar, fermentation often lasts until summer or even longer. This wine is bottled after 15 months in the barrel. All our wines are treated with the lowest intervention possible.
The long maceration time on the lees gives our wines a great structure and excellent aging potential.
