Vinification on skins: six/seven days fermentation with floating cap at a controlled temperature; pumping over. Malolactic fermentation is carried out in full after the alcoholic fermentation. Aeging in stainless steel or cement for five months. Brief ageing in the bottle before release. Colour: Brilliant ruby red of medium intensity. Bouquet: Intense and persistent, fruity, reminiscent of raspberries, plum, sour black cherry, cherry jam. Taste: Fresh, lively, balanced and harmonius; pleasently tannic on the palate with persistent aftertaste. The delicacy and slight spiciness make it a very versatile wine. Ideal with grilled food, white and red
meats, and medium aged cheeses. Pairs well even with fish.
