We are located 2 km from the Slovenian border on the slopes of Mount Calvario in the Collio wine region. 20 km to the south: the sea, 30 km to the north: the mountains. We live between extremes, working semi-heroic vineyards. Steep terraces composed of friable rocks: the Ponca (Opoka, Slovene) - composed of stratified sandstone and marls.
Fifteen hectares of vines are the fruit of three generations of the Podversic family. Since 1994 we have chosen to plant only indigenous varieties such as Tocai Friulano, Malvasia Istriana and Ribolla Gialla, respecting the soil and climatic characteristics. Soils facing south and south-west, with dense plantings of 8,000 vines per hectare, targeted defoliation and low yields, allow us to conclude the cycle of the vine with the seed gently matured.
Time is the owner of the cellar. The vinification is simple and same for all the wines. In the firsts months the wine gets signed by the maceration extracting: the crunchiness of the fruit, the minerality of the terroir and the rhythm of the vintage. Afterwards it remains for three years in the wooden belly of the barrels and one year in the bottle. Our work is focused on the preservation of what we reached in the vineyard and to reproduce it in every sip.
