We founded our winery in 2010 in the northern part of Bavaria with the ambition to show the
more thrilling side of Sylvaner. The winery is situated in Gambach, and most of our vineyards are
in the appellation of the Gambacher Kalbenstein. A terraced vineyard site at the banks of the
Main river. Not big in dimensions, just 7.5ha in total, but rich in soil complexity. With pure
limestone and red sandstone parts at its both ends and so many combinations of the two soils in
between. We think Sylvaner is a great variety to show the charakters of the diffrent soils. To help
this all wines are fermented spontaneously and aged in barrels for 22 month, just a little bit of
sulphur added before bottling, nothing else.

The Gambacher Kalbenstein is a terraced vineyard site along the Main River. The transition from limestone (Muschelkalk) to red sandstone (Sandstein) in the middle of the appellation allows us to showcase the Sylvaner's ability to express the characteristics of the soil in a very transparent manner. This wine is sourced from the river's lower part of the terraces, where the soil is a clay-rich red sandstone. It exhibits a more linear profile with a crisp acidity. The grapes are gently whole-bunch pressed and aged for two years in barrel. Nothing less.

The Gambacher Kalbenstein is a terraced vineyard site along the Main River. The transition from limestone (Muschelkalk) to red sandstone (Sandstein) in the middle of the appellation allows us to showcase the Sylvaner's ability to express the specifics of the soil in a very transparent manner. This wine is sourced from the river’s upper part of the terraces, which features a steep and warm plot with limestone soil. The chalky nature of the limestone soil imparts a charm that is distinct from the sandstone. The grapes are gently whole-bunch pressed and aged for two years in barrel. Nothing less.

The GK is our Grand Cru from the Gambacher Kalbenstein, a small, terraced appellation encompassing just 7.5 hectares in total. This wine is crafted from a selection of the oldest vines and the finest vineyard plots, which are situated in both red sandstone and limestone soils. The combination of the direct characteristics of the sandstone with the charming, more balanced expression of the limestone results in a complex wine. The grapes undergo gentle whole-bunch pressing using a basket press and are aged for two years in barrel. Nothing less.

The Sylvaner Himmelslücke is sourced from the highest elevation of the Gambacher Kalbenstein, where it is cultivated on pure limestone soil. The 45-year-old vines contribute a distinctive character, prompting us to bottle this plot separately. The grapes are gently whole bunch pressed and aged for two years in barrel. Nothing less.

Riesling

This Riesling is a reflection of five small parcels spread across the Gambacher Kalbenstein appellation. Four of these parcels are situated in the sandstone area, while one is located in the limestone. The combination of these two soil types results in a linear, acidity-driven Riesling. The grapes are gently whole-bunch pressed and aged for two years in barrel. Nothing less.

Spätburgunder
Red wine
The Spätburgunder is sourced from three small plots in the Gambacher Kalbenstein vineyard. The shell limestone (Muschelkalk) dominated plots are located on a small plateau at the top of the terraced area, and therefore are not exposed to the sun's reflections from the Main River or the heat reflections from the stone walls. Fermentation, which included 50% whole bunches, lasted for 10 days, followed by 15 months of aging in used barrels. Nothing less.
