IL CABERLOT is produced from the grapes of our 4 oldest vineyards, fermented in stainless steel, and then aged for 22 months in barrels from France, 65% new, and matured for another 16 months in the magnum prior to release.
2021 CARNASCIALE

CARNASCIALE is the second wine of IL CABERLOT. The grapes come from the two younger vineyards and the wine is aged for 22 months in a 40hl botte grande built by Marc Grenier from Burgundy, and then matured for another 6 months in the bottle prior to release.

The OTTANTADUE is a pure sangiovese, the grapes are fermented in cement and the wine is the aged neutrally in stainless steel over a period of 14 months.
