The winery owned by Sabine and Felix Eichbauer, owners of the Tantris restaurant in Munich, is located on the south-east side of Montalcino. A place of a wild beauty, Podere Salicutti takes its name from the stream of the same name that borders property to the south. Together with the cellar, the house forms the heart of a closed cosmos of 11 hectares of land, divided into 4.5 hectares of vineyards, an olive grove and wood. "The heart already existed before us, it nourishes our vines and will continue to exist, even after us". The motto of Sabine and Felix Eichbauer expresses a deep respect for nature and animals, as well as the always critical and rational view of the influence of man and cultural technology. Podere Salicutti is the first organic certified winery in Montalcino. Here the vines, planted at the beginning of '90, have their roots in soils that have never been treated with conventional pesticides. The managements and care of the vineyards take place in perfect harmony with nature, always listening to its impulses and signal.
