Palistorti means “crooked posts” because of the big rocks of limestone lying on the surface, thus impeding laying the vineyard in a straight line.
Vineyards and climate - Ten hectares vineyard, average 28 years old, on the Apennine slopes facing predominantly south, at an altitude of 200 metres above sea level, formed during a recent glaciation of sandstone or calcareous marl exposed by the melted ice.
Harvest / cellar: Hand picked in small boxes, grapes are sorted on a first selection belt, destemmed, then re sorted on a second selection belt to be delivered into the wooden vats, for fermentation. Manually plunged by foot. In these conditions, 10/15 days of maceration are sufficient for a gentle, full extraction of the aromas and quality tannins.
Maturation: After racking, the wine is allowed to settle briefly. Then, through gravity, it enters lightly toasted French barriques (no new oak), where it completes malolactic fermentation. Racking follows natural rhythms with air compressed rather than pumps. After 12 months wine is assembled in cement vats for another 6 months before bottling.
